上好的葡萄酒杯一般應是:設計簡單、無裝飾、高腳、薄壁、透明而無瑕疵。
酒杯口小腹大,狀如鬱金香,杯身容量大則葡萄酒可以自由呼吸,杯口略收窄則酒液晃動時不會濺出來且使酒香能聚集杯口,以便鑑賞酒香

高腳的理由:持杯時,可以用姆指、食指和中指捏住杯莖,手不會碰到杯身,避免手的溫度影響葡萄酒的最佳飲用溫度。


酒杯必須清潔,無任何污物及水痕。
酒杯的清洗很重要,最好用熱水浸泡。然後用蒸餾水沖洗,在純棉布上瀝乾。勿將杯子倒扣在紙上,因為紙漿的氣味對品嚐有一定的影響,使用前用乾淨的細絲綢擦淨酒杯。
應該說不同形狀的玻璃杯對不同葡萄酒有不同效果:
紅酒杯:杯身和杯腹呈鬱金香花狀,與白酒杯比較,杯腳略短,杯身較大。
白酒杯:杯口直徑比紅酒杯略大,杯腳較長,而杯口至杯腹較紅酒杯短。
香檳杯:杯身修長,因為香檳有汽泡,在杯底緩緩上升,不會那麼快揮發掉,你便可以慢慢欣賞。
甜酒杯:一般較細和矮小。

品酒溫度
品酒也必須注重酒本身最適飲用的溫度,酒的溫度可是會影響酒的品質。不同種類的葡萄酒有最能表現其質量的溫度。出於品嚐員是帶著挑剔的眼光進行品嚐的。所以,並不一定在能減輕葡萄酒缺陷和提高其質量的最佳條件下進行品嚐。所以,實際上多數專業品嚐都是在酒溫為15-20℃的條件下進行的。葡萄酒的最佳品定溫度範圍應是:13-18℃
